Fig Jam & Balsamic Vinegar Salad Dressing

When it's too hot to cook, I love a easily assembled summer salad! This delicious vinaigrette brightens any salad and especially good with goat cheese.

  • 1/3 cup good olive oil

  • 2 tbsp balsamic vinegar

  • 2 tsp Sarah's Slow Jam Fig Jam

  • 1/4 tsp Dijon mustard

  • Salt & pepper to taste

In a liquid measuring cup or bowl, combine all of the ingredients.

Stir well with a small whisk or a fork until the ingredients are blended.


Serve immediately, or cover and refrigerate for future use. Homemade vinaigrette keeps well for 7 to 10 days.

This salad dressing pairs well with mixed greens, dried fruit and goat cheese.
