Jammy Thumbprint Cookies

February calls for simple comforts and these easy jammy thumbprint cookies deliver! Buttery and sweet with a spoonful of Sarah's Slow Jam in the cetner, they are a go-to treat for chilly days and cozy gatherings. Whether you bake them for Valentine's Day or just because, they are a crowd-pleaser!

Ingredients

  • 1 c unsalted butter, softened

  • 2/3 c white sugar

  • 1 egg

  • 2 tsp vanilla extract, divided

  • 2 c all purpose flour

  • 1/2 strawberry jam

  • 1/2 c confectioner's sugar

  • 1 tsp milk


Instructions

  1. Preheat oven to 350 degrees. Place parchment paper on a cookie sheet.

  2. In a bowl, beat butter and sugar until creamy. Mix in egg.

  3. Add in 1 tsp of vanilla extract. Add in flour and mix until dough comes together

  4. Form dough into 2 inch balls and placed on the cookie sheet, 2 inches apart.

  5. Press your thumb into dough ball and fill with jam.

  6. Bake in batches until lightly browned- about 15-18 min.

  7. Mix confectioner's sugar and milk and remaining vanilla together until smooth. Drizzle over warm cookies.
